If I do a long hold on the “Listed” it shows me options to toggle lists on or off if it’s in one of my lists.
(That’s on an iPhone)

When typing if you do a long hold on -, =, . and quite a few more you’ll see options.
It’s most likely markdown if + is turning into a bullet. So some of the options here Basic Syntax | Markdown Guide will most likely work. I don’t use notes so I haven’t tested them

Not quite what I wondered. Know my keyboard have some of those other options
Case almost solved.

Haven’t found how to change color.
