V3 confused me, I can’t find out how to get to where the list of my rated shows and movies are. I also can’t find out where the section is for hidden items so I can remove some shows from the rewatching status.

There is a feature request here for a dedicated ratings page. For now, you can view your recent ratings from your profile page. Scroll to “Activity”, choose the “Ratings” star icon, then click the section title if you want to view a longer list. Here is a direct link to the ratings data.
There is not a dedicated page for this. All you can do for now is visit a show’s page, then you can stop rewatching from the … menu.
