I hid the first few seasons of a show from my viewing progress, but now I want to restore them. I can’t find the show in the Hidden Items page under Settings, so I have no way to unhide it.

You can find that option in the Hidden Items section.
You have to select ‘Watched Progress’ for the hidden seasons to show up:
