I’m too afraid to use that feature as I don’t know if it will reset all my episode history (clear them) or it will keep them and just add new history as I watch the show?

It’s non destructive and can also be undone (https://trakt.tv/settings/hidden). None of your existing play is history is removed, it just re-calculates the progress from the date you choose.
