I really think that there should be a feature that I wouldn’t have to choose the date that I’ve watched if I don’t remember, so I could trakt without influencing my history and my data, there are a lot of movies that I have seen, but can’t trakt and shows that I can’t see the real progress

This unfortunately isn’t something we’re planning to do. Trakt relies on having a watched date and it would be a huge undertaking to change that.
Just choose Add to History → Release Date. You’re, presumably, talking about older movies if you can’t guess an approximate date, so adding it as the release date isn’t going to throw off your statistics. At least that way, it will be marked as watched to help you keep track of completion of a list or progress in a show.
That is a good idea. However, if you mark a movie as “watched” that was released before you were born, it will appear under “First Play” in the “All Time Stats”. But yeah for all movies & series you watch near to the date of release it is a good workaround.
That still messes with the time of day/day of week/month of year statistics etc.
Being able to set only the part of a watched date I know for sure (e.g. year or year and month) is the feature I miss most dearly on Trakt.
